Baked Eggs In Avocados
Avocados are a great healthy fat and their trendiness isn't going anywhere anytime soon! Try this easy breakfast for a protein packed, healthy fat breakfast. Try adding a complex carbohydrate like sweet potatoes for a well rounded meal.
Ingredients:
- 2 ripe avocados
- 4 fresh eggs
- salt and pepper to taste
- 1 tablespoon chopped chives, cilantro, basil or other fresh herbs
Directions:
- Preheat the oven to 425 degrees
- Slice avocados in half, and take out the pit
- Scoop out about two tablespoons of flesh from the center of the avocado so the eggs will fit
- Place the avocados in a small baking dish
- Crack an egg into each avocado half
- Place in the oven and bake for 15 to 20 minutes
- Sprinkle with salt, pepper and herbs
