Baked Eggs In Avocados

Avocados are a great healthy fat and their trendiness isn't going anywhere anytime soon! Try this easy breakfast for a protein packed, healthy fat breakfast. Try adding a complex carbohydrate like sweet potatoes for a well rounded meal.

  1. Preheat the oven to 425 degrees
  2. Slice avocados in half, and take out the pit
  3. Scoop out about two tablespoons of flesh from the center of the avocado so the eggs will fit
  4. Place the avocados in a small baking dish
  5. Crack an egg into each avocado half
  6. Place in the oven and bake for 15 to 20 minutes
  7. Sprinkle with salt, pepper and herbs
