Butternut Squash Soup
- 1 garlic clove chopped
- ½ of small onion diced
- 2 TBS. of olive oil
- 1 large butternut squash, peeled, seeded and cut into chunks
- 2 medium sweet potatoes, peeled and cut into chunks
- 4 cups of broth (chicken or vegetable broth)
- 1 can of coconut milk (13.5 oz. can)
- 2 TBS. chopped chives
1. In large pot sauté garlic and onions in oil until soft
2. Add squash and sweet potatoes and sauté 3-5 minutes
3. Add broth and bring soup to boil
4. Add salt and pepper to taste
5. Reduce heat and simmer partially covered for about 20 minutes until tender
6. Remove soup from stove and blend mixture until smooth and creamy
7. Return soup to burner at low heat and add coconut milk and stir to heat through
8. Add chopped chives before serving
