Chicken Monaco Pasta Salad

Pasta salad has always been a staple inspiring and summer time dish 1, because it is so easy to whip together for a large crowd and 2, because it is so darn delicious! This pasta salad combines the fresh flavors of western Europe to create a beautiful, healthy and tasty dish!

Chicken Monaco Pasta Salad


  • 1 lb boneless, skinless chicken breasts
  • 1 lb seedless red grapes sliced
  • 8 oz crumbly blue cheese
  • ½ cup sliced almonds
  • 3 carrots shredded
  • 1 cucumber shredded
  • 3 scallions chopped
  • ¾ cup of olive oil
  • ¼ cup of lemon juice
  • 1 TSP of chopped dill
  • 16 oz package of pasta (bow-tie, or corkscrew)


  1. Poach chicken until tender and shred
  2. Cook pasta and drain
  3. Mix chicken, pasta, grapes almonds, carrots, cucumber and scallions together in large bowl

Make Dressing

  1. Combine olive oil, lemon juice and dill weed and mix well
  2. Season with salt and pepper to taste
  3. Add dressing to pasta mixture and stir until combined
  4. Add blue cheese and mix lightly
  5. Refrigerate for at least 4 hours or overnight
