Crispy Roasted Mushrooms

​These Crispy Roasted Mushrooms are so much better than the soggy sauteed ones! Try these out as a side dish alone or add to another salad for a crispy crunch and earthy taste. Let us know what you think in the comments section below!

Crispy Roasted Mushrooms


  • 1 LB of assorted mushrooms (such as Oyster, Shiitake, Cremini)
  • 1 LB of white button mushrooms
  • ½ Cup of olive oil
  • 6 fresh thyme sprigs (2 additional for garnish)
  • Salt and pepper


1. Roughly chop mushrooms so that pieces are about bite size. White button mushrooms should be cut in half or quarters if large

2. Toss mushrooms with olive oil, fresh thyme and salt and pepper

3. Roast on 2" rimmed baking sheet at 450 degrees for about 30 -35 minutes, tossing once, until golden brown and crispy

4. Garnish with fresh thyme sprigs

Serve Warm – Serves 8
