Cucumber, Radish and Carrot Salad

​Cucumber, Radish and Carrot Salad

  • 1 large cucumber-peeled, halved lengthwise, seeded and sliced thin crosswise 
  • 1 cup of thinly sliced radishes 
  • 1 cup of thinly sliced carrots 
  • ¼ cup of rice vinegar 
  • ¼ cup of white vinegar 
  • 1 TBS of soy sauce 
  • 1 TSP of sesame oil 
  • 1 TBS of sugar 
  • 2 TBS of thinly sliced scallions 
  • 1 TSP of salt 

1. In a colander toss the cucumber, radishes and carrots with salt and let drain for 20 minutes 

2. In a small bowl whisk together the vinegars, soy sauce, sugar, and sesame oil until sugar is dissolved 

3. In a separate bowl toss vegetables with vinegar mixture and scallions 

4. Let the mixture marinate at room temperature for 30 minutes 

5. Cover and chill until serving
