Flour-less Banana Bread
Ingredients:
- 2 cups old-fashioned rolled oats
- 3 medium ripe bananas
- 2 large eggs
- 1/4 cup pure maple syrup
- 1 tsp baking soda
- 1/2 cup chocolate chips, nuts or dried fruit (optional)
Directions:
- Preheat oven to 350 degrees
- Lightly grease a 9x5 inch pan
- Add all ingredients to a blender or food processor and blend until smooth and mix in any additions
- Pour batter into prepared loaf pan
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean
- Let cool completely in loaf pan
- Store bread in an airtight container in the refrigerator
