Fresh Marinated Garlic Tomatoes

Fresh Marinated Garlic Tomatoes

These fresh tomatoes are slightly roasted, then marinated in oil, garlic, honey and vinegar! Delicious served on a crostini with goat cheese and olives. Let us know what you think in the comments section below!

Fresh Marinated Garlic Tomatoes


  • 4 cups of cherry tomatoes
  • 3 tbs olive oil divided
  • ¼ tsp salt
  • 1 tbs balsamic vinegar
  • ½ tsp honey or sugar
  • 2 small garlic cloves, mashed
  • ¼ cup fresh basil leave torn in to medium pieces


1. Preheat oven to 375 degrees

2. Toss tomatoes with 2 tbs olive oil and salt in a shallow baking pan lined with parchment paper

3. Roast until tomatoes soften and start to wrinkly but are still slightly plump (about 30 minutes)

4. In a medium bowl whisk together 1 tbs olive oil, balsamic vinegar and sugar or honey

5. Stir in garlic, basil and tomatoes (including any accumulated juices)

6. Let cool to room temperature before serving
