Fresh Pumpkin Salsa
Ingredients:
- 2 sugar pumpkins, diced into 1/2 in cubes
- 2 tomatoes, seeded and chopped
- 2 jalapeños, diced (remove seeds to make a less spicy salsa)
- 1 red onion, diced
- 1 clove minced garlic
- 1 medium sweet onion, diced
- 1 1/2 Tbsp brown sugar or coconut sugar
- 1/2 cup finely chopped cilantro
- 2 Tbsp extra virgin olive oil
- 1/4 Tsp cinnamon
- 1/4 Tsp cumin
- Salt to taste
Directions:
- Blanch pumpkin in boiling water for 3 minutes
- Drain pumpkin on paper towel and lightly salt
- Combine remaining ingredients with pumpkin and serve
