Minted Beets

Roasted, Minted Beets are a delicious way to enjoy the lovely root vegetable that is beets! This simple recipe is super easy to throw together and is sure to impress the entire table. Let us know what you think in the comments section below!

Minted Beets


  • 2 LBS of beets trimmed
  • 1 head of red leaf lettuce for lining platter
  • 1 TBS of rice vinegar
  • 1 TBS of balsamic vinegar
  • 3 TBS of olive oil
  • ¼ Cup of loosely packed finely chopped fresh mint leaves
  • Salt to taste


1. Wrap beets tightly in foil and roast for about 1 ½ hours or until tender

2. Unwrap beets and let them cool until they can be handled

3. Remove skins and cut into ¼ pieces

4. In large bowl whisk together vinegars and salt to taste

5. Add oil in a stream whisking until dressing is emulsified

6. Add beets to bowl with two thirds of mint and mix well

7. Line platter with lettuce leaves, divide beets on platter and sprinkle with remaining mint
