Roasted Asparagus with Dijon-Lemon Sauce

A simple side dish that's bursting with lemon flavor. Perfect for a spring dinner, lunch or even breakfast!

Roasted Asparagus With Dijon-Lemon Sauce


  • 1-2 lbs of asparagus trimmed
  • 4 tsp of olive oil, divided
  • ½ tsp of salt
  • 2 garlic cloves minced
  • 1 tsp grated lemon zest
  • 2 tbs fresh lemon juice
  • ½ tsp Dijon mustard
  • ¼ tsp ground pepper
  • 1 tbsp chopped fresh parsley


1. Combine asparagus, 2 tsp olive oil and garlic in large bowl tossing well to coat evenly

2. Arrange asparagus in single layer on baking sheet and bake at 425 for 12 minutes until crisp and tender

3. Combine 2 tsp olive, lemon zest, lemon juice and pepper in a small bowl and whisk

4. Place asparagus on a platter and drizzle with dressing.Sprinkle with Parsley before serving
