Roasted Winter Vegetables

These Roasted Winter Vegetables are a great way to enjoy all of the wonderful vegetables that are in season. We love hearing from you so let us know what you think in the comments section below.

Roasted Winter Vegetables

Ingredients:

  • 4 large beets, peeled and cut into ½ inch wedges
  • 1 pound of turnips, peeled and cut in ½ inch wedges
  • 2 pounds of red-skinned potatoes, peeled and cut into ½ wedges
  • 1 ½ pounds of carrots, peeled and cut into ¾ inch pieces
  • 1 pound of parsnips, peeled and cut into ¾ inch pieces
  • 3/4 cup of olive oil
  • 5 TBS of balsamic vinegar
  • 3 TBS chopped fresh thyme

Preparation:

  1. Preheat Oven to 400 degrees
  2. Place vegetables in a very large bowl
  3. Add olive oil, 3 TBS of balsamic vinegar and thyme
  4. Toss to coat all vegetables and season with salt and pepper
  5. Brush 2 large baking sheets with oil
  6. Divide vegetables between the 2 sheets
  7. Roast until tender, stirring occasionally, about 1 hour
  8. Drizzle remaining 2 TBS of oil over vegetables before serving

Yields 8 servings
