Summer Vegetable Frittata
Try our Summer Vegetable Fittata with whatever leftover vegetables you have on hand. It's a great, healthy recipe to throw together on any morning!
Ingredients:
- 6 large eggs
- ½ cup milk
- 1 Tbsp. olive oil
- ½ cup diced squash
- ½ cup dices peppers
- ½ cup sliced mushrooms
- ¼ cup minced onions
- 1 Tbsp.minced basil
- 2 oz. grated cheese
- salt and pepper to taste
Preparation:
1. Heat oven to 425
2. Whisk together eggs, milk, salt and pepper-set aside
3. Heat skillet over medium heat and add olive oil followed by vegetables
4. Cook until vegetables start to soften
5. Pour egg mixture over vegetables and sprinkle with basil
6. Cook on low heat until frittata starts to set
7. Sprinkle with cheese and bake about 15 minutes until puffy and set
