​Thai Cabbage Salad

  • ​1/3 cup of safflower or other vegetable oil 
  • 1/3 cup of white wine vinegar 
  • 2 TBS sugar 
  • 3 TBS soy sauce 
  • 1 cup of chopped cilantro 
  • 2 cloves of chopped garlic 
  • 4-6 cups of shredded cabbage (green and napa, or any combination you like) 
  • 1 cucumber seeded and diced 
  • 2 carrots shredded 
  • 1 cup unsalted chopped peanuts 
  • 3 green onions sliced (use green part as well) 
  • 1 red bell pepper cut into 2" strips 

1. Combine oil, vinegar, sugar, soy sauce, cilantro and chopped garlic and mix well

2. In large bowl mix together cabbage, carrots, cucumber, bell pepper 

3. Pour dressing over cabbage mixture and toss with peanuts and green onion
